New Year, New Recipe!
The end of the year sure got crazy for me, I know that's an excuse but I definitely let myself go, went the easy way out when it came to meals and stopped going to the gym.
I don't fully believe in resolutions, but definitely improving yourself and your life as the year goes by. Last year I wanted to lose baby weight, which I did but gained back (like I said I let myself go) and also to read more. I was 100% successful when it came to reading more and I asked for more books for Christmas to read this year.
Motherhood craziness, work stress and life in general get in the way sometimes but this year I want to really concentrate on a positive mind for myself. I worry A LOT and about things out of my control, let others get to me when they don't deserve the time of day, have self hate towards my body and am anxious and stressed about things way too often. Calming my mind is a big priority this year. I always don't worry about myself and only worry about my son but I need to be in a good place. I completed my more reading last year and I will make sure this is a priority for me this coming year.
Eating better and FINALLY losing weight that I know I can lose and feeling better needs to happen too...finally. The thing is every time I am eating better I feel so much better and every time I eat like complete crap I feel like complete crap. I give my son the best food possible (for the most part) because I know that's so important but now I need to make myself just as important and always not just sometimes. Yes, I will eat chocolate and cheeseburger, etc. but the 80/20 rule needs to be an on going thing. Dieting for a wedding, vacation or to fit into a certain dress shouldn't be a thing, it should be always to be your best self. That is my concentration in 2018. Maybe that's a resolution, maybe it's not but whatever it is I am excited for it and I deserve it.
I started with a big healthy food shopping trip on Sunday and have been eating good since Monday. I already feel better and I am still allowing myself a small chocolate candy treat from holiday leftovers.
One of the recipes I made this week was a roasted sweet potato over an arugula salad. It came out really good, was super satisfying and all the flavors ended up going good together.
The sweet potato recipe calls for:
4 sweet potatoes
4 part skim mozzarella slices
1 cup marinara sauce
salt
pepper
red pepper flakes
avocado or olive oil
garlic powder
fresh basil, chopped
-- Preheat the oven to 425 degrees. Clean and poke holes in the sweet potatoes and microwave for 10 minutes. Slice the potatoes in half and place on a baking pan. Drizzle with oil, salt, pepper, red pepper flakes and garlic powder. Bake in the oven for about 30 minutes or until the potatoes are softened.
-- Once the potatoes are roasted fully, top with marinara and mozzarella cheese. Bake until the cheese melts and top with chopped basil.
The arugula salad recipe calls for:
4 cups of arugula
avocado or olive oil
pepper
balsamic vinegar
avocado slices
-- Mix all ingredients except for the avocado slices in a bowl and plate the salad.
-- Add avocado slices and top with the finished roasted sweet potato.
